Know that.... 

S easons keep changing all around and that means you will soon find many different items in the market places to create your meals with. I make soups and vegetarian pasta meals with the finer quality root vegtables and huge squash, like pumpkins and Hubbard that are currently available. Also there is great winter fruit, like red pears for desserts or tart apples that are especailly good to use in your holiday bread stuffing. I'm going to share my family recipe for stuffing with you this month.

This recipe will make enough stuffing for 10-12 pound bird. Reduce the amount by half or more for items like stuffed pork chops, chicken breasts, orange roughy fillets or stuffed portabello mushrooms.

Bread Stuffing with Walnuts and Pippen Apples.

The idea is to create a rather dry stuffing, so you may need to use more or less water or one less egg, just depends. The dressing will take on moisture from the bird and will remain light for serving if you start out fairly dry...it should just hold together when pressed in your palm. A word or caution: Lightly but fully stuff your bird. Packing the stuffing in tightly is not good practice, no one wants to create a health hazard for the holiday.

 

1 box seasoned dry bread stuffing or 4-6 cups of various
   dry bakery bread crumbs like, rye, cheese-onion, french with poppy    seed, or sour-dough, be inventive.
1 tablespoons prepared mustard, use plain or european grainy mixtures
   but never with horseradish!
1/2 cup butter, melted
1 large onion, diced
1 bunch parsley, chopped
4 sprigs of sage, diced or 2 tsp poultry seasoning spice

2-3 pippen apples, corded and diced
1 cup chopped walnuts
2-3 stocks celery, diced
Pepper to taste
1/2 cup water or dry white wine or dry vermouth
2 eggs

 

Start by combining the bread crumbs with the herbs, vegetables, apples, and nuts. Then add the mustard and melted butter to the mix. Use your hands to combine and feel the textures for moisture content as you go. Now add the eggs and water as needed.

You can add other fun things to this stuffing to, different herbs, dry raisins, cranberries, pecans, but never change the apple, onions or celery, that is where the secret is! You can stuff the entire bird with only them and get great results.
